  1. Prepare the watermelon by cutting it into cubes and removing any seeds. For the best texture, use seedless watermelon or carefully remove all black seeds.
  2. Place the watermelon cubes in a blender along with the sugar, lime juice, and pinch of salt. Blend until completely smooth, about 1-2 minutes. If the mixture is too thick to blend properly, add a tablespoon of water to help it along.
  3. Taste the mixture and adjust sweetness if needed. Remember that frozen desserts taste less sweet once frozen, so it should taste slightly sweeter than you'd prefer in the final product.
  4. Pour the blended mixture into a freezer-safe container. Cover with plastic wrap or a lid and freeze for at least 4-6 hours, or until firm.
  5. For the best texture, remove the sorbet from the freezer about 10 minutes before serving to soften slightly. Scoop and enjoy!

Notes

Choose ripe watermelon for best results. For extra smooth sorbet, stir the mixture every hour during the first 2-3 hours of freezing to break up ice crystals. The amount of sugar needed may vary depending on the sweetness of your watermelon.
