  • 8 oz rotini or fusilli pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced black olives
  • 1/2 cup sliced green olives
  • 1/2 red bell pepper, diced
  • 1/2 yellow bell pepper, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • Optional: 1/4 cup grated Parmesan cheese

  1. Cook the pasta - Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente. Drain well and rinse with cold water to stop the cooking process.
  2. Prepare the vegetables - While pasta is cooking, chop all vegetables and herbs. Combine tomatoes, olives, bell peppers, red onion, basil, and parsley in a large mixing bowl.
  3. Make the dressing - Whisk together olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl until well combined.
  4. Combine everything - Add the cooled pasta to the vegetable mixture. Pour the dressing over everything and toss gently to combine. Add Parmesan cheese if using.
  5. Chill and serve - Cover and refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled or at room temperature.

Notes

For parties: Double or triple the recipe. Tastes better the next day - great for meal prep. Add artichoke hearts, roasted red peppers or fresh mozzarella for variation.
