- Cook the pasta - Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente. Drain well and rinse with cold water to stop the cooking process.
- Prepare the vegetables - While pasta is cooking, chop all vegetables and herbs. Combine tomatoes, olives, bell peppers, red onion, basil, and parsley in a large mixing bowl.
- Make the dressing - Whisk together olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl until well combined.
- Combine everything - Add the cooled pasta to the vegetable mixture. Pour the dressing over everything and toss gently to combine. Add Parmesan cheese if using.
- Chill and serve - Cover and refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled or at room temperature.
Notes
For parties: Double or triple the recipe. Tastes better the next day - great for meal prep. Add artichoke hearts, roasted red peppers or fresh mozzarella for variation.
