  • 1/2 cup shredded mozzarella

  1. In a large bowl, combine flour, yeast, sugar, and salt. Gradually add warm water and olive oil, mixing until a soft dough forms. Knead for 5-7 minutes until smooth and elastic. Let rise in a warm place for 1 hour.
  2. Heat olive oil in a skillet over medium heat. Add sliced mushrooms and cook until golden brown. Add garlic, balsamic vinegar, and thyme. Cook for 2 more minutes until fragrant. Season with salt and pepper.
  3. Roll out the dough into a rectangle. Spread mushroom mixture evenly, then sprinkle with goat cheese, spinach, and mozzarella. Roll tightly into a log and slice into 1-inch pieces.
  4. Place pizza rolls on a parchment-lined baking sheet. Bake at 400°F (200°C) for 15-18 minutes until golden brown and cheese is bubbly.
  5. For flatbread pizza, roll dough into oval shapes. Top with mushroom mixture and bake directly on pizza stone or baking sheet for crispy crust.
