  1. Prepare your ingredients by rinsing rice under cold water until water runs clear, finely chopping onion, mincing garlic, and zesting/juicing lemons
  2. Heat olive oil in large pot or Dutch oven over medium heat, sauté chopped onion until translucent (about 5 minutes), then add minced garlic and cook for another minute until fragrant
  3. Add rinsed rice to pot and stir constantly for 2-3 minutes until rice becomes slightly toasted and fragrant, then add red pepper flakes, cayenne pepper, and dried oregano, stirring for another minute
  4. Pour in vegetable or chicken broth and lemon juice, bring to boil, then reduce heat to low, cover pot, and simmer for 15-18 minutes
  5. Remove from heat and let sit covered for 5 minutes, then fluff with fork and stir in lemon zest, fresh dill, and parsley, seasoning with salt and black pepper to taste
  6. Transfer to serving dish, garnish with additional fresh herbs and lemon wedges
