- Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan with butter or cooking spray, then line with parchment paper for easy removal.
- In a large mixing bowl, whisk together the flour, sugar, baking soda, and salt.
- In a saucepan, combine 1 cup butter, 1 cup water, and ⅓ cup cocoa powder. Heat over medium heat until the butter melts and mixture comes to a gentle boil. Remove from heat and pour over the dry ingredients.
- In a separate small bowl, whisk together buttermilk, eggs, and vanilla extract. Add this mixture to the chocolate base and stir until just combined.
- Pour the batter into your prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake bakes, prepare the fudgy icing by combining ½ cup butter, ⅓ cup cocoa powder, and ⅓ cup milk in a saucepan. Bring to a boil, then remove from heat. Whisk in powdered sugar and vanilla until smooth. Stir in nuts if using.
- Once the cake is done baking, pour the warm icing over the hot cake. Spread evenly with a spatula.
Notes
Use high-quality cocoa powder for richest flavor. Mix batter until just combined - a few lumps are okay. Let cake cool completely before cutting. Cake tastes better the next day as flavors meld.
