  • 1/4 cup blue cheese crumbles (optional)
  • 2 green onions, chopped

Instructions
  1. Prepare the chicken by shredding cooked chicken breast. Use rotisserie chicken for convenience or bake/boil chicken breasts until cooked through.
  2. In a large mixing bowl, combine softened cream cheese, ranch dressing, and buffalo sauce. Mix until smooth and well-combined.
  3. Fold in the shredded chicken, 3/4 cup of the Monterey Jack cheese, and 3/4 cup of the cheddar cheese. Reserve remaining cheese for topping. Add blue cheese if using.
  4. Transfer mixture to an oven-safe baking dish. Sprinkle remaining cheeses on top. Bake at 350°F (175°C) for 20-25 minutes, or until dip is bubbly and cheese is golden brown.
  5. Remove from oven, sprinkle with chopped green onions, and serve immediately with tortilla chips, celery sticks, or crackers.
