- Prepare the chicken by shredding cooked chicken breast. Use rotisserie chicken for convenience or bake/boil chicken breasts until cooked through.
- In a large mixing bowl, combine softened cream cheese, ranch dressing, and buffalo sauce. Mix until smooth and well-combined.
- Fold in the shredded chicken, 3/4 cup of the Monterey Jack cheese, and 3/4 cup of the cheddar cheese. Reserve remaining cheese for topping. Add blue cheese if using.
- Transfer mixture to an oven-safe baking dish. Sprinkle remaining cheeses on top. Bake at 350°F (175°C) for 20-25 minutes, or until dip is bubbly and cheese is golden brown.
- Remove from oven, sprinkle with chopped green onions, and serve immediately with tortilla chips, celery sticks, or crackers.
Notes
Choose rotisserie chicken for convenience, adjust buffalo sauce for preferred heat level, make ahead option - prepare up to 24 hours in advance and refrigerate, can also use slow cooker method for parties.
