- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes with an electric mixer).
- Beat in the eggs one at a time, then add the vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add this dry mixture to the wet ingredients, mixing just until combined.
- Stir in the oats and any optional add-ins like raisins or chocolate chips. The dough will be thick and hearty.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. For extra-perfect cookies, gently flatten each ball slightly with your palm.
- Bake for 10-12 minutes, or until the edges are golden brown but the centers still look slightly soft. The cookies will continue to set as they cool.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Butter temperature matters - use properly softened butter (not melted). Don't overmix once flour is added. Chill dough for 30 minutes if too soft to prevent spreading. Remove cookies when slightly underdone in center for perfect chewy texture.
