  1. Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal. Mash your ripe bananas in a medium bowl until smooth.
  2. In a separate bowl, combine the oats, cinnamon, and salt. If you're adding nuts or chocolate chips, mix them in at this stage.
  3. Add the mashed bananas, honey/maple syrup, and vanilla extract to the dry ingredients. Mix until everything is well combined and the oats are fully coated.
  4. Transfer the mixture to your prepared baking pan. Use the back of a spoon or your hands to press it firmly into an even layer.
  5. Bake for 20-25 minutes, or until the edges are golden brown. Let cool completely in the pan before cutting into bars.

Notes

Use very ripe bananas with brown spots for natural sweetness. Recipe can be made gluten-free with certified gluten-free oats. Bars can be refrigerated for no-bake version. Store in airtight container for up to 5 days or freeze for 3 months.
