- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper
- In a medium bowl, whisk together the flour, baking soda, and salt
- In a large mixing bowl, beat the softened butter with brown sugar and granulated sugar until light and fluffy (about 2-3 minutes)
- Beat in the egg and vanilla extract until fully incorporated, scraping down the sides of the bowl
- Gradually add the flour mixture to the wet ingredients, mixing until just combined, then fold in the oats and any optional add-ins
- Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about 2 inches apart, and bake for 10-12 minutes until edges are golden brown but centers are still soft
- Let cookies cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely
Notes
Use room temperature butter for easy creaming, don't overmix to avoid tough cookies, remove cookies when centers look slightly underdone as they continue cooking on the hot baking sheet, and store in airtight container for up to 5 days or freeze dough balls for future baking.
