- Pat the pork dry with paper towels and season both sides with salt and pepper. If using pork tenderloin, trim any excess silver skin. Allow the pork to come to room temperature for about 15 minutes for more even cooking.
- In a small bowl, whisk together the maple syrup, Dijon mustard, minced garlic, soy sauce, and smoked paprika.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the pork for 2-3 minutes per side until golden brown.
- Brush half of the maple mustard glaze over the pork, then transfer the skillet to a preheated 400°F oven. Bake for 15-20 minutes, or until the internal temperature reaches 145°F.
- Remove from oven and brush with remaining glaze. Let the pork rest for 5-10 minutes before slicing.
Notes
Use pure maple syrup rather than pancake syrup for best flavor. Don't overcook - remove pork at 145°F for optimal juiciness. Allow pork to rest before slicing for maximum tenderness.
