  • 95 g plain (all-purpose) flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 225 g dark chocolate (chopped)
  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g caster or granulated sugar
  • 90 g Demerara or raw sugar
  • 1 teaspoon vanilla
  • 85 g dark or milk chocolate chips

Method
 

Instructions
  1. Preheat oven to 160°C fan or 170°C conventional and line baking tray with parchment paper
  2. Melt dark chocolate and butter using double boiler method, then stir in vanilla
  3. Whip eggs and sugars with electric whisk for 5 minutes until light, thick and fluffy
  4. Sift together flour, cocoa powder, baking powder, salt and mix in chocolate chips
  5. Gently fold melted chocolate mixture into whipped eggs and sugars
  6. Carefully fold dry ingredients into wet mixture until just combined
  7. Scoop tablespoon portions onto baking tray and bake for 12-14 minutes
  8. Remove from oven, sprinkle with sea salt if desired, cool on tray then rack

Use room temperature eggs for best whipping results; don't overmix batter; oven temperatures may vary so watch carefully; sprinkle with sea salt after baking for enhanced flavor; can be frozen for later use
