- Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken sausage and cook until lightly browned, about 3-4 minutes. Remove the sausage from the skillet and set aside.
- In the same skillet, add the diced onion and bell pepper. Cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Stir in the rice, Cajun seasoning, and smoked paprika. Cook for 2 minutes, stirring constantly to coat the rice with the spices and oil.
- Return the cooked sausage to the skillet. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and liquid is absorbed.
- Remove from heat and let stand covered for 5 minutes. Fluff with a fork, season with salt and pepper to taste, and garnish with fresh parsley if desired.
Notes
Customize the heat by adjusting Cajun seasoning amount. Use long-grain rice for best results. Let rice rest covered after cooking for perfect texture. Add vegetables like corn, peas, or diced tomatoes for extra nutrition.
