  1. Prepare the Fruits: Wash all fruits thoroughly. Peel and cube the dragon fruit, dice the mangoes, hull and halve the strawberries, and slice the kiwi. For the pineapple, you can use fresh chunks or high-quality canned pineapple in juice (drained).
  2. Create the Dressing: In a small bowl, whisk together the maple syrup, fresh lime juice, lime zest, and a pinch of sea salt. The salt helps balance the sweetness and enhances the fruit flavors.
  3. Combine and Toss: In a large serving bowl, gently combine all the prepared fruits. Drizzle the maple syrup dressing over the fruit mixture and toss very gently to coat. Be careful not to crush the delicate berries.
  4. Add Final Touches: Sprinkle the chopped mint leaves over the salad and give it one final gentle toss. For best results, let the salad sit for 10-15 minutes to allow the flavors to meld together.
