- Preheat your oven to 425°F (220°C). Wash the green beans thoroughly and pat them dry with paper towels. Trim the ends off the beans and place them in a large mixing bowl.
- Add olive oil, minced garlic, Italian seasoning, salt, and black pepper to the green beans. Toss everything together until the beans are evenly coated with the oil and seasonings.
- Spread the seasoned green beans in a single layer on a baking sheet lined with parchment paper. Make sure they're not overcrowded to ensure even roasting and crispiness.
- Roast for 15-20 minutes, shaking the pan halfway through cooking. The green beans should be tender with slightly crispy edges when done.
- Sprinkle the grated Parmesan cheese over the hot green beans and return to the oven for 2-3 minutes until the cheese melts. Garnish with fresh parsley and serve immediately.
Notes
Choose fresh beans for best results, don't overcrowd the baking sheet, and adjust cooking time based on bean thickness. Fresh beans roast better than frozen ones.
