  • 2 cups fresh strawberries, hulled and sliced
  • 1 large cucumber, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey or maple syrup
  • Salt and freshly ground black pepper to taste
  • Optional: 1/4 cup red onion, thinly sliced

  1. Wash and dry the strawberries, then remove the stems and slice them into uniform pieces. Wash the cucumber and slice it thinly. If using red onion, slice it very thinly. Chop the fresh mint leaves, reserving a few whole leaves for garnish.
  2. In a small bowl, whisk together the olive oil, lemon juice, and honey until well combined. Season with a pinch of salt and pepper to taste.
  3. In a large mixing bowl, gently toss the strawberries, cucumber, and red onion (if using) with the dressing. Be careful not to crush the strawberries.
  4. Just before serving, sprinkle the crumbled feta cheese and chopped mint over the salad. Gently toss to combine, making sure the cheese and mint are evenly distributed.
  5. Transfer the salad to a serving bowl and garnish with additional mint leaves. Serve immediately for the best texture and flavor.

Notes

For best flavor, use ripe sweet strawberries in season. English or Persian cucumbers work best. If preparing ahead, keep dressing separate and combine just before serving to prevent sogginess. Pairs well with grilled proteins or pasta dishes.
