- Prepare the vegetables and fruit. Wash the cucumbers and strawberries thoroughly. Slice the cucumbers into thin rounds using a sharp knife or mandoline. Hull the strawberries and slice them into quarters or halves, depending on their size.
- Make the dressing. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, sea salt, and black pepper until well combined. The honey should dissolve completely into the mixture.
- Combine the salad. In a large mixing bowl, gently toss the sliced cucumbers and strawberries together. Add the chopped mint leaves and crumbled feta cheese, being careful not to crush the delicate ingredients.
- Dress and serve. Drizzle the dressing over the salad and toss gently to coat all ingredients evenly. Let the salad sit for 5 minutes to allow the flavors to meld together. Garnish with toasted almonds if desired, and serve immediately.
Notes
Choose ripe but firm strawberries that hold their shape when sliced. English or Persian cucumbers work best. Prepare components ahead and combine just before serving to maintain crisp texture. Can customize with red onion, avocado, or grilled chicken.
