  1. Wash the strawberries and cucumber thoroughly. Hull the strawberries and slice them into uniform pieces. Thinly slice the cucumber using a mandoline or sharp knife for even slices.
  2. In a small bowl, whisk together the olive oil, lime juice, honey, sea salt, and black pepper until well combined. Taste and adjust seasoning if needed.
  3. In a large mixing bowl, combine the sliced strawberries, cucumber, and chopped mint. Drizzle the dressing over the salad and gently toss to coat all ingredients evenly.
