Ingredients

Ingredients
  • 1 pound fresh green beans, ends trimmed
  • 3 tablespoons high-quality basil pesto
  • 2 tablespoons olive oil
  • 2 tablespoons grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon pine nuts or slivered almonds (optional)
  • Fresh basil leaves for garnish

Method

Instructions
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Bring a large pot of salted water to boil. Add green beans and cook for 2-3 minutes until bright green but still crisp. Immediately transfer to an ice water bath to stop cooking, then drain thoroughly.
  3. In a large bowl, combine basil pesto, olive oil, garlic powder, salt, and pepper. Add the blanched green beans and toss until evenly coated.
  4. Spread the coated green beans in a single layer on your prepared baking sheet. Roast for 12-15 minutes, tossing halfway through, until beans are tender-crisp and slightly golden at the edges.
  5. Remove from oven and immediately sprinkle with Parmesan cheese and optional nuts. Garnish with fresh basil leaves. Serve warm as a vibrant side dish.

Notes

Blanching is key to preserve vibrant green color and ensure even cooking. Use high-quality pesto for best flavor. Spread beans in single layer to ensure they roast rather than steam.
