  • 2 large carrots, grated
  • 1/2 red onion, thinly sliced
  • 1/2 cup chopped fresh parsley
  • 3/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or sugar
  • 1 teaspoon celery seed
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

  1. Prepare the vegetables by shredding the cabbage using a mandoline slicer or sharp knife. Place the shredded cabbage in a large mixing bowl.
  2. Grate the carrots using a box grater and add them to the cabbage. Thinly slice the red onion and chop the fresh parsley, then add both to the bowl.
  3. In a separate small bowl, whisk together all the dressing ingredients: mayonnaise, apple cider vinegar, Dijon mustard, honey, celery seed, garlic powder, salt, and pepper. Whisk until smooth and well combined.
  4. Pour the creamy dressing over the vegetable mixture. Using tongs or a large spoon, toss everything together until the vegetables are evenly coated.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

Coleslaw improves with time - make ahead for best flavor. Adjust dressing to taste - more vinegar for tangier, more honey for sweeter.
