Ingredients

Ingredients
  • 1 lb smoked turkey or chicken sausage, sliced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 2 tbsp Cajun seasoning
  • 1 tsp paprika
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method

Instructions
  1. Prep Ingredients: Slice the sausage into ½-inch rounds, dice the bell peppers and onion, and mince the garlic.
  2. Brown Sausage: Heat olive oil in a large skillet over medium-high heat. Add sausage slices and cook until browned on both sides, about 5-7 minutes. Remove and set aside.
  3. Sauté Vegetables: In the same skillet, add onions and bell peppers. Cook until softened, about 5 minutes. Add garlic and cook for 1 minute until fragrant.
  4. Add Rice and Seasonings: Stir in rice, Cajun seasoning, and paprika. Cook for 2 minutes, stirring constantly to coat the rice with oil and spices.
  5. Combine Liquids: Pour in chicken broth, honey, and soy sauce. Stir well to combine and bring to a simmer.
  6. Cook Rice: Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and liquid is absorbed.
  7. Finish Dish: Return sausage to the skillet, stir to combine, and cook for 2 more minutes to heat through.
  8. Serve: Garnish with fresh parsley and serve hot directly from the skillet.

Notes

For extra flavor, use andouille-style chicken sausage if available. Don't skip browning the sausage - it adds depth of flavor. Let the dish rest for 5 minutes after cooking for the flavors to meld.
