  • ¾ cup semisweet chocolate chips (optional)
  • ¾ cup walnuts, toasted, chopped (optional)
  • ½ cup (1 stick) unsalted butter, room temperature
  • 1 cup sugar
  • 2 large eggs
  • 1 ½ cups mashed ripe bananas
  • 2 tablespoons fresh lemon juice
  • 1 ½ teaspoons vanilla extract

Method
 

Instructions
  1. Preheat oven to 350°F. Butter and flour 9x5x2½-inch glass or metal loaf pan
  2. Whisk or sift flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a medium bowl. If adding chocolate chips and walnuts, combine them in a small bowl and add 1 tablespoon flour mixture to coat them
  3. Beat butter in large bowl until fluffy. Gradually add sugar, beating until well blended. Beat in eggs one at a time, then beat in mashed bananas, lemon juice and vanilla extract
  4. Beat in flour mixture just until combined. Spoon one-third of batter into prepared pan, sprinkle with half of nut mixture. Spoon another third of batter, sprinkle with remaining nut mixture. Cover with final third of batter and run a knife through batter in zigzag pattern
  5. Bake until tester inserted into center comes out clean, about 55-65 minutes. Check at 55-minute mark and cool on rack

Notes

Use perfectly ripe bananas with brown spots for best flavor and moisture. Room temperature ingredients blend better. Lemon juice prevents browning and helps with rising. Don't overmix batter for tender crumb. Check doneness with toothpick test at 55-minute mark.
