Ingredients

Ingredients
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 ounces pasta (penne or fettuccine)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil for garnish

Method

Instructions
  1. Cook the pasta according to package directions until al dente. Drain and set aside.
  2. Season chicken pieces with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown and cooked through, about 6-8 minutes.
  3. Remove chicken from skillet and set aside. In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  4. Pour in chicken broth and heavy cream. Bring to a simmer, then reduce heat to medium. Stir in Parmesan cheese until melted and sauce thickens slightly.
  5. Return cooked chicken to the skillet along with the cooked pasta. Stir gently to combine all ingredients and coat everything in the creamy sauce.
  6. Simmer for 2-3 minutes to allow flavors to meld. Garnish with fresh basil and additional Parmesan cheese before serving.

Notes

The dish gets its name because it's so delicious it could inspire a marriage proposal! For extra richness, use chicken thighs instead of breasts.
