Ingredients

Ingredients
  • 1 pound carrots, peeled and cut into 2-inch pieces
  • 1 pound fresh green beans, trimmed
  • 3 tablespoons butter, melted
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • Optional: 1 tablespoon chopped fresh parsley for garnish

Method

Instructions
  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it with olive oil.
  2. In a small bowl, whisk together the melted butter, honey, minced garlic, thyme, salt, and pepper until well combined.
  3. Place the carrots and green beans in a large mixing bowl. Drizzle with the honey butter mixture and toss until all vegetables are evenly coated.
  4. Spread the vegetables in a single layer on the prepared baking sheet. Make sure they're not overcrowded to ensure even roasting.
  5. Roast for 20-25 minutes, stirring halfway through, until the vegetables are tender and the edges are caramelized. For extra crispiness, you can broil for the last 2-3 minutes.
  6. Remove from oven, garnish with fresh parsley if desired, and serve immediately while warm.

Notes

Cut vegetables evenly for uniform cooking. Don't overcrowd the pan - use two baking sheets if necessary. Adjust sweetness by reducing honey to 1 tablespoon if preferred. Can be prepared up to 24 hours in advance and stored separately before roasting.
