- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it with olive oil.
- In a small bowl, whisk together the melted butter, honey, minced garlic, thyme, salt, and pepper until well combined.
- Place the carrots and green beans in a large mixing bowl. Drizzle with the honey butter mixture and toss until all vegetables are evenly coated.
- Spread the vegetables in a single layer on the prepared baking sheet. Make sure they're not overcrowded to ensure even roasting.
- Roast for 20-25 minutes, stirring halfway through, until the vegetables are tender and the edges are caramelized. For extra crispiness, you can broil for the last 2-3 minutes.
- Remove from oven, garnish with fresh parsley if desired, and serve immediately while warm.
Notes
Cut vegetables evenly for uniform cooking. Don't overcrowd the pan - use two baking sheets if necessary. Adjust sweetness by reducing honey to 1 tablespoon if preferred. Can be prepared up to 24 hours in advance and stored separately before roasting.
