  • 3 ripe bananas, mashed (about 1 1/2 cups)
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)
  • 1/4 cup granulated sugar
  • 1 tablespoon cinnamon
  • 2 tablespoons melted butter

  1. Preheat your oven to 350°F (175°C). In a large mixing bowl, mash the bananas until smooth. Add the melted butter, brown sugar, granulated sugar, eggs, and vanilla extract. Mix until well combined.
  2. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in walnuts if using.
  3. In a small bowl, mix together the cinnamon swirl ingredients: 1/4 cup sugar, cinnamon, and melted butter. Set aside.
  4. Pour half of the banana bread batter into a greased 9x5-inch loaf pan. Sprinkle half of the cinnamon mixture over the batter. Add the remaining batter, then top with the remaining cinnamon mixture. Use a knife to swirl through the layers.
  5. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Use extremely ripe bananas for best flavor. Don't overmix the batter. Test for doneness with a toothpick. Allow to cool completely before slicing for clean cuts.
