  1. In a medium saucepan, combine water, butter, 1 tablespoon sugar, and salt. Bring to a boil over medium heat. Remove from heat and immediately stir in the flour until a smooth ball forms. Let cool for 5 minutes.
  2. Once the dough has cooled slightly, beat in the egg and vanilla extract until thoroughly combined. The dough should be smooth and slightly sticky.
  3. Transfer the dough to a piping bag fitted with a star tip. Pipe 2-inch strips onto parchment paper, then cut into bite-sized pieces. Alternatively, you can roll small spoonfuls of dough into balls.
  4. Preheat your air fryer to 375°F (190°C). Lightly spray the churro bites with cooking spray or brush with melted coconut oil. Arrange in a single layer in the air fryer basket, leaving space between them. Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  5. While churros are cooking, mix together the cinnamon and sugar coating. Immediately toss the hot churro bites in the cinnamon sugar mixture until evenly coated. Serve warm for best texture.

Notes

Dough consistency: The dough should be smooth but firm enough to hold its shape when piped. If too sticky, add a tablespoon more flour; if too dry, add a teaspoon of water. Don't overcrowd the air fryer basket – cook in batches if necessary to ensure even browning and crispiness.
