  • 1.5 lbs baby potatoes, halved
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • 2 tbsp butter, melted

  1. Preheat your oven to 400°F (200°C). In a large bowl, toss the halved potatoes with 1 tablespoon olive oil, salt, pepper, and half of the minced garlic.
  2. Spread the potatoes in a single layer on a large baking sheet or roasting pan. Roast for 15 minutes while you prepare the chicken.
  3. In a separate bowl, mix the grated parmesan, remaining garlic, oregano, basil, paprika, and a pinch of salt and pepper. Brush the chicken breasts with melted butter, then press the parmesan mixture onto both sides of each chicken breast.
  4. Remove the potatoes from the oven and push them to the sides of the pan. Place the coated chicken breasts in the center. Drizzle with the remaining olive oil.
  5. Return the pan to the oven and bake for 20-25 minutes, or until the chicken reaches 165°F internally and the potatoes are golden and crispy.
  6. Garnish with fresh parsley and serve immediately. The crispy parmesan crust and tender chicken pair perfectly with the garlicky potatoes.

Notes
