Ingredients

Ingredients
  • 1 pound fresh green beans, trimmed
  • 8 ounces cremini mushrooms, sliced
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon soy sauce (or tamari)
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Method

Instructions
  1. Blanch the green beans in boiling water for 3-4 minutes until bright green and slightly tender. Drain and immediately transfer to an ice water bath to stop the cooking process.
  2. Heat olive oil in a large skillet over medium-high heat. Add sliced mushrooms and cook for 5-6 minutes until golden brown and tender.
  3. Reduce heat to medium and add butter to the skillet. Once melted, add minced garlic and cook for 1 minute until fragrant.
  4. Add the blanched green beans to the skillet along with soy sauce, salt, and pepper. Toss everything together and cook for 2-3 minutes until the green beans are heated through.
  5. Remove from heat and stir in fresh parsley and lemon juice. Serve immediately while hot.

Notes

Don't skip the blanching step for best texture - it ensures green beans stay crisp-tender. Add red pepper flakes or grated Parmesan cheese for extra flavor. Pairs well with garlic butter chicken pasta or herb chicken.
