- Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a large mixing bowl, combine Cheerios and any optional add-ins like chocolate chips or dried fruit.
- In a microwave-safe bowl or small saucepan, gently warm the peanut butter, honey, and coconut oil until smoothly combined. Stir in vanilla extract.
- Pour the warm peanut butter mixture over the Cheerios and stir until all pieces are evenly coated.
- Transfer the mixture to the prepared pan and press down firmly with your hands or the back of a spoon.
- Refrigerate for at least 2 hours or until firm. Cut into bars and store in an airtight container.
