- In a microwave-safe bowl, combine the peanut butter and honey. Heat for 30-45 seconds until warm and easily stirrable.
- Stir in the vanilla extract until well combined.
- Add the Cheerios to the mixture and gently fold until all pieces are coated. If using chia seeds or chocolate chips, add them now.
- Transfer the mixture to a parchment-lined baking dish and press down firmly with your hands or the back of a spoon.
- Refrigerate for at least 2 hours, then cut into bars or squares. Store in an airtight container.
Notes
Make it a family activity by involving toddlers in mixing and arranging. Double batches freeze well. Use sunflower seed butter if school has nut-free policies. Perfect for portion control in silicone muffin cups.
