- Preheat your oven to 375°F (190°C). Arrange the split English muffins on a baking sheet, cut side up. Lightly brush each muffin half with olive oil to help them crisp up nicely during baking.
- In a medium bowl, whisk the eggs with a pinch of salt and pepper until well combined. Cook in a non-stick skillet over medium heat, stirring gently until softly scrambled. Remove from heat while they're still slightly wet - they'll finish cooking in the oven.
- Divide the scrambled eggs evenly among the English muffin halves. Top each with your choice of toppings - bell peppers, mushrooms, onions, and crumbled turkey bacon. Sprinkle generously with mozzarella cheese and finish with a light dusting of Parmesan.
- Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the cheese is melted and bubbly and the edges of the English muffins are golden brown. Watch carefully to prevent burning.
- Remove from oven and let cool for 1-2 minutes before serving. Garnish with fresh herbs if desired. These are best enjoyed warm and fresh from the oven!
