  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 cup white sugar
  • ½ cup butter (softened)
  • 2 large eggs
  • 3 ripe bananas (mashed, about 1 1/3 cups)
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • 3/4 cup semisweet chocolate chips

Equipment

  • 9x5 inch loaf pan
  • electric mixer
  • mixing bowls
  • whisk
  • parchment paper (optional)

Method

Instructions
  1. Preheat the oven to 325°F and grease a 9x5-inch loaf pan or line with parchment paper
  2. Whisk together flour, baking powder, baking soda, cinnamon, and salt in a bowl. Set aside
  3. Beat sugar and butter together in a large bowl with an electric mixer until light and fluffy
  4. Add eggs one at a time, beating well after each addition
  5. Mix in mashed bananas, milk, and vanilla extract
  6. Mix in flour mixture until just blended
  7. Fold in chocolate chips (saving a few for the top) and pour batter into the prepared loaf pan
  8. Sprinkle reserved chocolate chips on top
  9. Bake for 60-70 minutes until a toothpick inserted into the center comes out clean, covering with aluminum foil if getting too brown at the end
  10. Cool in the pan for a little bit before slicing

Notes

Use very ripe bananas with brown spots for best sweetness and moisture. The lower oven temperature (325°F) ensures even baking without over-browning. Reserve some chocolate chips for topping for better presentation. Bread can be frozen for up to 3 months.
