  • 1 (24 oz) jar high-quality marinara sauce
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil leaves for garnish

  1. Preheat your oven to 400°F (200°C). Cut the chicken breasts into uniform 1-inch cubes and season with salt and pepper.
  2. Spread 1/2 cup of marinara sauce in the bottom of a 9x13 inch baking dish. Arrange the seasoned chicken cubes evenly over the sauce. Pour the remaining marinara sauce over the chicken.
  3. Sprinkle 1.5 cups of shredded mozzarella cheese evenly over the chicken and sauce mixture.
  4. In a small bowl, mix panko breadcrumbs with the remaining 1/2 cup mozzarella, parmesan cheese, Italian seasoning, garlic powder, and olive oil. Sprinkle this mixture evenly over the casserole.
  5. Bake for 20-25 minutes, or until the chicken is cooked through (165°F internal temperature) and the topping is golden brown and crispy.
  6. Let the casserole rest for 5 minutes before serving. Garnish with fresh basil leaves and additional parmesan if desired.
