- Preheat your oven to 400°F (200°C). Cut the chicken breasts into uniform 1-inch cubes and season with salt and pepper.
- Spread 1/2 cup of marinara sauce in the bottom of a 9x13 inch baking dish. Arrange the seasoned chicken cubes evenly over the sauce. Pour the remaining marinara sauce over the chicken.
- Sprinkle 1.5 cups of shredded mozzarella cheese evenly over the chicken and sauce mixture.
- In a small bowl, mix panko breadcrumbs with the remaining 1/2 cup mozzarella, parmesan cheese, Italian seasoning, garlic powder, and olive oil. Sprinkle this mixture evenly over the casserole.
- Bake for 20-25 minutes, or until the chicken is cooked through (165°F internal temperature) and the topping is golden brown and crispy.
- Let the casserole rest for 5 minutes before serving. Garnish with fresh basil leaves and additional parmesan if desired.
