- Preheat your oven to 350°F (175°C). Grease two 8-inch round cake pans and line with parchment paper.
- In a large mixing bowl, combine flour, sugar, baking powder, and salt. Add milk, vegetable oil, eggs, and vanilla extract. Mix until just combined – be careful not to overmix.
- Divide the batter evenly between the two prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool completely on a wire rack.
- While cakes cool, whip the heavy cream with powdered sugar until stiff peaks form. Slice the strawberries.
- Assemble the cake by placing one layer on a serving plate, topping with whipped cream and strawberries. Add the second layer and cover with remaining whipped cream and berries.
Notes
For the lightest, fluffiest cake, make sure all your ingredients are at room temperature before mixing. Sift your flour and baking powder to prevent lumps in the batter.
