  • 1/2 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain well and rinse with cold water to stop the cooking process. Transfer to a large mixing bowl.
  2. While the pasta cooks, chop your hard-boiled eggs, celery, and red onion. Set aside a few egg yolk halves and olive slices for decorating later. The key to perfect hard-boiled eggs is placing them in cold water, bringing to a boil, then simmering for 10-12 minutes before cooling in ice water.
  3. In a medium bowl, whisk together mayonnaise, mustard, apple cider vinegar, sugar, paprika, garlic powder, salt, and pepper until smooth and well combined. Taste and adjust seasoning as needed.
  4. Add the chopped eggs, celery, red onion, pickle relish, and chives to the cooled pasta. Pour the dressing over everything and gently toss until evenly coated. Be careful not to overmix to keep egg pieces intact.
  5. Transfer the salad to a serving bowl. Use the reserved egg yolks, olive slices, and carrot pieces to create cute emoji faces on top - smiley faces, winking faces, or heart eyes.
  6. Cover and refrigerate for at least 1 hour to allow the flavors to meld together. Serve cold.
