- Prepare the vegetables by washing and cutting the potatoes and carrots. Place them in the bottom of your crock pot.
- Season the chicken breasts with salt, pepper, paprika, thyme, and rosemary. Place them on top of the vegetables.
- In a small bowl, mix the melted butter with minced garlic. Pour this garlic butter mixture over the chicken and vegetables.
- Add the chicken broth to the crock pot, being careful not to wash the seasonings off the chicken.
- Cover and cook on HIGH for 4 hours or LOW for 6-7 hours, until chicken is cooked through and vegetables are tender.
- Once cooked, garnish with fresh parsley and serve hot. The delicious garlic butter sauce makes a perfect gravy for your meal!
Notes
For even cooking, cut vegetables into similar-sized pieces. For extra flavor, sear chicken before slow cooking. For thicker sauce, mix cornstarch with water and add during last 30 minutes of cooking.
