  • 4 boneless, skinless chicken breasts
  • 1.5 lbs baby potatoes, halved
  • 4 large carrots, peeled and cut into 1-inch pieces
  • 1/2 cup unsalted butter, melted
  • 6 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup chicken broth
  • 2 tablespoons fresh parsley, chopped (for garnish)

Method
 

Instructions
  1. Prepare the vegetables by washing and cutting the potatoes and carrots. Place them in the bottom of your crock pot.
  2. Season the chicken breasts with salt, pepper, paprika, thyme, and rosemary. Place them on top of the vegetables.
  3. In a small bowl, mix the melted butter with minced garlic. Pour this garlic butter mixture over the chicken and vegetables.
  4. Add the chicken broth to the crock pot, being careful not to wash the seasonings off the chicken.
  5. Cover and cook on HIGH for 4 hours or LOW for 6-7 hours, until chicken is cooked through and vegetables are tender.
  6. Once cooked, garnish with fresh parsley and serve hot. The delicious garlic butter sauce makes a perfect gravy for your meal!

Notes

For even cooking, cut vegetables into similar-sized pieces. For extra flavor, sear chicken before slow cooking. For thicker sauce, mix cornstarch with water and add during last 30 minutes of cooking.
