- Prepare the Zucchini: Wash and dry the zucchinis thoroughly. Trim off the ends and cut them into fry-shaped sticks, about 1/2-inch thick and 3-4 inches long. Pat them completely dry with paper towels.
- Create the Coating Station: In one shallow bowl, whisk together the plant-based milk and cornstarch until smooth. In another bowl, combine the almond flour, nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Coat the Fries: Working in batches, dip the zucchini sticks into the milk mixture, letting excess drip off. Then roll them in the flour mixture, pressing gently to ensure even coating. Place the coated fries on a baking sheet.
- Air Fry to Perfection: Preheat your air fryer to 400°F (200°C). Arrange the zucchini fries in a single layer in the air fryer basket, making sure they don't touch. Lightly spray with cooking oil. Air fry for 12-15 minutes, flipping halfway through, until golden brown and crispy.
- Serve Immediately: Remove the fries from the air fryer and serve hot with your favorite dipping sauces like marinara, vegan ranch, or tahini sauce.
Notes
Dry zucchini thoroughly before coating for maximum crispiness. Don't overcrowd the air fryer basket. Serve immediately after cooking. Can be baked in regular oven at 425°F for 20-25 minutes if air fryer is not available.
