Instructions
- Prepare the zucchini by cutting them into 1/2-inch thick sticks, similar to French fries. Pat them completely dry with paper towels - this is crucial for maximum crispiness!
- Set up your breading station with three shallow bowls. Place flour in the first bowl, beaten eggs in the second, and mix panko, Parmesan, garlic powder, paprika, salt, and pepper in the third bowl.
- Dredge each zucchini stick in flour, shaking off excess. Dip in egg, then coat thoroughly with the panko mixture, pressing gently to help it adhere.
- Preheat your air fryer to 400°F (200°C). Arrange the coated zucchini fries in a single layer in the air fryer basket, making sure they don't touch. Lightly spray with cooking spray.
- Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy. Serve immediately with your favorite dipping sauce.
Notes
Dry zucchini thoroughly before breading for maximum crispiness. Don't overcrowd the air fryer basket - cook in batches if needed. Serve immediately while hot and crispy for best results.
