- Prepare the Chicken: Place chicken breasts between two pieces of plastic wrap and gently pound to 1/2-inch thickness
- Create the Parmesan Coating: In one shallow bowl, whisk the eggs. In another bowl, mix panko breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, paprika, salt, and pepper
- Coat the Chicken: Dip each chicken breast first in the egg mixture, letting excess drip off, then press firmly into the Parmesan mixture, coating both sides completely
- Bake to Perfection: Place coated chicken on a baking sheet lined with parchment paper. Drizzle with olive oil and bake at 400°F (200°C) for 20-25 minutes, or until golden brown and internal temperature reaches 165°F (74°C)
Notes
Don't skip pounding the chicken for even thickness. Use freshly grated Parmesan for best crispiness. Refrigerate coated chicken for 15 minutes before baking for extra crispy results.
