- Cut the zucchinis into ½-inch thick sticks, similar to French fries. Pat them completely dry with paper towels - this is crucial for maximum crispiness!
- Create three shallow bowls: one with flour, one with beaten eggs, and one with the panko mixture (combine panko, parmesan, garlic powder, Italian seasoning, paprika, salt, and pepper).
- Dredge each zucchini stick in flour, then dip in egg, and finally coat thoroughly in the panko mixture. Press gently to ensure the coating sticks well.
- Arrange the coated zucchini fries in a single layer in your air fryer basket. Lightly spray with cooking spray. Air fry at 400°F for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- While the fries cook, whisk together all ranch dip ingredients until smooth. Adjust consistency with milk if desired, and season to taste.
- Remove fries from air fryer and serve hot with the creamy ranch dip. Enjoy the perfect crispy texture while they're fresh!
