- Pat the salmon fillets dry with paper towels and season both sides generously with salt and pepper
- Heat olive oil in a large skillet over medium-high heat, place salmon fillets skin-side up and cook for 4-5 minutes until golden brown, then flip and cook for another 2-3 minutes before removing from skillet
- In the same skillet, add minced garlic and sauté for 30 seconds until fragrant, then add sun-dried tomatoes and cook for another minute
- Pour in heavy cream, scraping up any browned bits from the bottom of the pan
- Stir in Parmesan cheese, Italian seasoning, and red pepper flakes if using, then let the sauce simmer for 2-3 minutes until slightly thickened
- Add spinach and cook until just wilted
- Return the salmon fillets to the skillet, spooning the creamy sauce over them, garnish with fresh basil and serve immediately
Notes
Choose quality wild-caught salmon for better flavor, don't overcrowd the pan when cooking salmon, adjust red pepper flakes to preferred spice level, and the sauce can be prepared in advance
