  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil for garnish

Instructions
  1. Pat the salmon fillets dry with paper towels and season both sides generously with salt and pepper
  2. Heat olive oil in a large skillet over medium-high heat, place salmon fillets skin-side up and cook for 4-5 minutes until golden brown, then flip and cook for another 2-3 minutes before removing from skillet
  3. In the same skillet, add minced garlic and sauté for 30 seconds until fragrant, then add sun-dried tomatoes and cook for another minute
  4. Pour in heavy cream, scraping up any browned bits from the bottom of the pan
  5. Stir in Parmesan cheese, Italian seasoning, and red pepper flakes if using, then let the sauce simmer for 2-3 minutes until slightly thickened
  6. Add spinach and cook until just wilted
  7. Return the salmon fillets to the skillet, spooning the creamy sauce over them, garnish with fresh basil and serve immediately

Notes

Choose quality wild-caught salmon for better flavor, don't overcrowd the pan when cooking salmon, adjust red pepper flakes to preferred spice level, and the sauce can be prepared in advance
