  • 8 oz fettuccine or linguine pasta
  • 2 salmon fillets
  • 3 cloves garlic
  • 1 tablespoon olive oil
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon lemon juice
  • salt and black pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • fresh parsley for garnish

Method
 

Instructions
  1. Bring salted water to boil and cook pasta until al dente. Reserve 1/2 cup pasta water.
  2. Pat salmon fillets dry and season with salt and pepper.
  3. Heat olive oil in skillet over medium-high heat. Cook salmon 4-5 minutes per side until flaky. Set aside.
  4. In same skillet, sauté garlic for 30 seconds until fragrant.
  5. Add heavy cream, Parmesan, lemon juice, and red pepper flakes. Simmer 2-3 minutes until thickened.
  6. Add cooked pasta and spinach to skillet. Toss until spinach wilts.
  7. Flake salmon into bite-sized pieces and gently fold into pasta.
  8. Adjust sauce consistency with reserved pasta water if needed. Garnish with parsley and serve.

Notes

Use room temperature salmon for even cooking. Reserve pasta water to adjust sauce consistency.
