- Bring a large pot of salted water to boil. Add your pasta and cook according to package directions until al dente. Reserve ½ cup of pasta water before draining.
- While pasta cooks, pat salmon dry and season both sides with salt and pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook salmon for 4-5 minutes per side until golden brown and cooked through. Remove from pan and set aside.
- In the same skillet, add remaining olive oil and sauté minced garlic for 1 minute until fragrant. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and smooth. Add lemon juice, zest, and season with salt and pepper.
- Flake the cooked salmon into bite-sized pieces. Add cooked pasta to the cream sauce along with ¼ cup of reserved pasta water. Stir gently to coat the pasta. Add mixed greens and flaked salmon, tossing everything together until greens are slightly wilted. Add more pasta water if needed for desired consistency.
- Serve immediately garnished with fresh herbs and an extra sprinkle of Parmesan.
Notes
Choose quality salmon for best flavor, don't overcook the salmon, use starchy pasta water for perfect sauce consistency, wilt greens gently just before serving.
