  • 12 oz salmon fillets, skin removed and cut into chunks
  • 8 oz pasta (penne, fettuccine, or linguine)
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh dill, chopped
  • 2 tbsp lemon juice
  • Salt and black pepper to taste
  • 1 tsp dried Italian herbs
  • Lemon wedges for serving

Instructions
  1. Cook pasta in salted water until al dente, reserving 1/2 cup pasta water before draining.
  2. Season salmon with salt and pepper, then cook in olive oil for 3-4 minutes per side until golden. Remove and set aside.
  3. Sauté onion for 2-3 minutes until softened, add garlic and cook for 1 minute until fragrant.
  4. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and smooth.
  5. Add cooked pasta to sauce with a splash of reserved pasta water. Gently fold in cooked salmon chunks.
  6. Stir in fresh dill, lemon juice, and dried herbs. Season with additional salt and pepper if needed. Serve immediately.

Notes

Don't overcook the salmon - cook just until opaque. Use starchy pasta water for perfect emulsified sauce. Fresh herbs make a significant difference in flavor.
