- Cook pasta in salted water until al dente, reserving 1/2 cup pasta water before draining.
- Season salmon with salt and pepper, then cook in olive oil for 3-4 minutes per side until golden. Remove and set aside.
- Sauté onion for 2-3 minutes until softened, add garlic and cook for 1 minute until fragrant.
- Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and smooth.
- Add cooked pasta to sauce with a splash of reserved pasta water. Gently fold in cooked salmon chunks.
- Stir in fresh dill, lemon juice, and dried herbs. Season with additional salt and pepper if needed. Serve immediately.
Notes
Don't overcook the salmon - cook just until opaque. Use starchy pasta water for perfect emulsified sauce. Fresh herbs make a significant difference in flavor.
