  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 oz spaghetti noodles
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 bell pepper, diced (any color)
  • 3 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

  1. Heat olive oil in large skillet or Dutch oven over medium-high heat. Season chicken with salt, pepper, and 1 tablespoon Cajun seasoning. Cook until golden brown and cooked through (5-7 minutes). Remove chicken and set aside.
  2. In same skillet, add onion and bell pepper. Cook until softened (3-4 minutes). Add garlic and cook for another minute until fragrant.
  3. Add remaining Cajun seasoning to vegetables, then pour in chicken broth. Bring to boil. Break spaghetti noodles in half and add to boiling broth. Cook according to package directions, stirring occasionally.
  4. When pasta is al dente, reduce heat to low. Stir in heavy cream and return cooked chicken to skillet. Add both cheeses and stir until melted and sauce has thickened.
  5. Taste and adjust seasoning if needed. Garnish with fresh parsley and serve immediately.

Notes

Choose spice level by adjusting Cajun seasoning amount; cook pasta to al dente as it continues cooking in sauce; dish reheats well and can be frozen for up to 3 months.
