- Make the simple syrup by combining 1/2 cup sugar and 1/2 cup water in a small saucepan. Heat over medium heat, stirring constantly until sugar dissolves completely. Remove from heat and add 1/4 cup mint leaves. Let steep for 15-20 minutes, then strain out mint leaves.
- In a blender, puree the cubed watermelon until smooth. Strain through a fine-mesh sieve to remove any pulp, pressing with a spoon to extract all the juice.
- In a large pitcher, combine the watermelon juice, fresh lemon juice, mint-infused simple syrup, and 4 cups cold water. Stir well to combine.
- Taste and adjust sweetness if needed. Add more sugar syrup if you prefer it sweeter.
- Refrigerate for at least 1 hour to allow flavors to meld together.
- Serve over ice with fresh mint leaves, watermelon slices, and lemon slices for garnish.
Notes
For the best flavor, use ripe, sweet watermelon and freshly squeezed lemon juice. Make it ahead - the flavors develop even more if you let it chill overnight. For a fun twist, freeze watermelon balls or lemon slices into ice cubes.
