  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp fresh parsley, chopped
  • 1/3 cup extra virgin olive oil
  • 3 tbsp balsamic vinegar
  • 1 tbsp lemon juice
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Method
 

Instructions
  1. Cook the tortellini according to package directions until al dente. Drain and rinse with cold water to stop the cooking process.
  2. In a large mixing bowl, whisk together olive oil, balsamic vinegar, lemon juice, Italian seasoning, garlic powder, salt, and pepper to create the dressing.
  3. Add the cooled tortellini to the dressing and toss gently to coat. This allows the pasta to absorb the flavors.
  4. Fold in the mozzarella pearls, beef salami, cherry tomatoes, black olives, roasted red peppers, and red onion.
  5. Just before serving, stir in the fresh basil and parsley. For best results, refrigerate for at least 30 minutes to allow flavors to meld.
