- Cook the tortellini according to package directions until al dente. Drain and rinse with cold water to stop the cooking process.
- In a large mixing bowl, whisk together olive oil, balsamic vinegar, lemon juice, Italian seasoning, garlic powder, salt, and pepper to create the dressing.
- Add the cooled tortellini to the dressing and toss gently to coat. This allows the pasta to absorb the flavors.
- Fold in the mozzarella pearls, beef salami, cherry tomatoes, black olives, roasted red peppers, and red onion.
- Just before serving, stir in the fresh basil and parsley. For best results, refrigerate for at least 30 minutes to allow flavors to meld.
Notes
For best flavor, make ahead and refrigerate for 2-4 hours before serving. Customize with additional vegetables like artichoke hearts or cucumber. For creamier dressing, add a tablespoon of mayonnaise or Greek yogurt.
