  • 1 (28-ounce) can crushed tomatoes
  • 2 large sprigs basil

  • 1 cup panko bread crumbs
  • 1 teaspoon garlic powder
  • 2 cups finely grated Parmesan, divided
  • 3/4 cup all-purpose flour
  • 2 large eggs
  • 6 boneless, skinless chicken cutlets (about 1 1/2 pounds total)
  • 1 cup shredded mozzarella
  • 1 cup vegetable or canola oil
  • Chopped fresh basil for serving

  1. Make marinara sauce: Heat 3 tbsp olive oil in saucepan, sauté onion until translucent (5-7 min), add garlic for 1 min, add crushed tomatoes and basil sprigs, simmer for 20-25 min
  2. Prepare chicken: Pound cutlets to 1/4-inch thickness, set up breading station with flour, beaten eggs, and panko-Parmesan mixture
  3. Dredge chicken: Coat chicken in flour, then egg, then panko-Parmesan mixture
  4. Cook chicken: Heat vegetable oil in skillet, fry chicken 3-4 min per side until golden brown
  5. Bake: Preheat oven to 400°F, spread sauce in baking dish, add fried chicken, top with sauce, Parmesan and mozzarella, bake 15-20 min
  6. Serve: Garnish with fresh basil and serve with pasta, polenta or bread

Notes

Use panko bread crumbs for extra crispy crust. Pound chicken evenly for uniform cooking. Homemade marinara sauce makes a significant difference in flavor.
