  • 2 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh parsley for garnish

  1. Heat olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook until browned, about 5-7 minutes. Remove sausage from skillet and set aside.
  2. In the same skillet, add diced onion and bell peppers. Cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Stir in the rice, Cajun seasoning, smoked paprika, and dried thyme. Cook for 2 minutes, stirring constantly to toast the rice and spices.
  4. Pour in the diced tomatoes with their juices and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and liquid is absorbed.
  5. Return the cooked sausage to the skillet, stir to combine, and cook for another 2-3 minutes to heat through. Garnish with fresh parsley before serving.
