Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook until browned, about 5-7 minutes. Remove sausage from skillet and set aside.
- In the same skillet, add diced onion and bell peppers. Cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
- Stir in the rice, Cajun seasoning, smoked paprika, and dried thyme. Cook for 2 minutes, stirring constantly to toast the rice and spices.
- Pour in the diced tomatoes with their juices and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and liquid is absorbed.
- Return the cooked sausage to the skillet, stir to combine, and cook for another 2-3 minutes to heat through. Garnish with fresh parsley before serving.
Notes
Choose the right sausage: Look for beef or chicken sausage with Cajun seasoning for authentic flavor. Don't skip toasting the rice: This step adds depth of flavor and helps prevent mushy rice. Let it rest: After cooking, let the skillet sit covered for 5 minutes to allow flavors to meld.
