Ingredients

Ingredients
  • 12 oz pasta (linguine or spaghetti works best)
  • 2 pints cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1/2 cup fresh basil leaves, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and freshly ground black pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Red pepper flakes (optional, for spice)

Method

Instructions
  1. Halve the cherry tomatoes and place them in a large mixing bowl. Add minced garlic, olive oil, balsamic vinegar, and a generous pinch of salt and pepper. Let this mixture marinate while you cook the pasta.
  2. Bring a large pot of salted water to boil. Cook the pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
  3. Add the hot, drained pasta to the tomato mixture along with the reserved pasta water. Toss everything together until the pasta is well coated.
  4. Stir in the chopped basil and grated Parmesan cheese. Taste and adjust seasoning as needed.
  5. Divide the pasta among serving bowls and garnish with extra basil leaves and Parmesan cheese.

Notes

Choose quality ingredients since this recipe relies on simple ingredients. Reserve pasta water for perfect sauce consistency. Don't overcook garlic to preserve its bright flavor. Best enjoyed immediately while pasta is still warm.
