  • 1 pre-made pizza crust or homemade dough
  • 2 cups sliced cremini mushrooms
  • 1 red onion, thinly sliced
  • 4 oz goat cheese, crumbled
  • 2 cups fresh spinach
  • 3 tbsp balsamic glaze
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh thyme leaves for garnish

  1. Heat olive oil in a skillet over medium heat. Add sliced mushrooms and red onion, sauté until golden and tender (about 8-10 minutes). Add minced garlic and cook for another minute. Season with salt and pepper.
  2. Preheat your oven to 425°F (220°C). Roll out your pizza dough on a baking sheet. Brush with olive oil and spread the spinach leaves evenly. Top with the mushroom and onion mixture.
  3. Sprinkle crumbled goat cheese over the toppings. Drizzle with half of the balsamic glaze. Bake for 12-15 minutes until crust is golden and cheese is bubbly.
  4. Remove from oven, drizzle with remaining balsamic glaze, and sprinkle with fresh thyme. Slice and serve immediately.

Notes

Always preheat your oven – a hot oven creates the best crust. Don't overload with toppings to prevent soggy crust. Let pizza rest for 2-3 minutes after baking for cleaner slicing.
