- Heat olive oil in a skillet over medium heat. Add sliced mushrooms and red onion, sauté until golden and tender (about 8-10 minutes). Add minced garlic and cook for another minute. Season with salt and pepper.
- Preheat your oven to 425°F (220°C). Roll out your pizza dough on a baking sheet. Brush with olive oil and spread the spinach leaves evenly. Top with the mushroom and onion mixture.
- Sprinkle crumbled goat cheese over the toppings. Drizzle with half of the balsamic glaze. Bake for 12-15 minutes until crust is golden and cheese is bubbly.
- Remove from oven, drizzle with remaining balsamic glaze, and sprinkle with fresh thyme. Slice and serve immediately.
Notes
Always preheat your oven – a hot oven creates the best crust. Don't overload with toppings to prevent soggy crust. Let pizza rest for 2-3 minutes after baking for cleaner slicing.
